SUMMER JOY ICE CREAM

Vanilla and Chocolate ice cream recipes.

Vanilla

1 C Whole milk

¾ C Sugar ( I use raw sugar, allulose, or monk fruit sugar. Your choice.)

Pinch salt

2 C Heavy cream ( I have also used half & half)

1 TBSP Vanilla

Use an electric mixer or whisk by hand the milk, sugar, salt, and vanilla until the sugar and salt have dissolved. Hand mix in the cream. Cover and refrigerate 1-2 hours or overnight. Then put the mixture in the frozen Cuisinart freezer bowl and turn on the Cuisinart machine. When the mixture is thickened, it is ready. If you like it firmer, place it in an airtight container and put it in the freezer.

Add-ins:

Crushed cookies, nuts, fruit, chocolate chips, carob chips, or your favorite candy, chopped up.

 

Chocolate

2/3 C Cocoa powder or carob sifted

½ C Sugar of choice

1/3 C Dark brown sugar

Pinch of salt

1 C Whole milk

2 C Heavy cream ( may use half & half)

½ TBSP Vanilla             

Whisk together Cocoa powder, sugars, and salt. Use an electric mixer and add in the milk with the cocoa, sugars, and salt until dissolved. Mix in the heavy cream and vanilla by hand into the mixture. Cover and refrigerate it for one to two hours or overnight. Pour into the Cuisinart freezer bowl and turn on the ice cream maker as above. After the ice cream is finished, add in any of the above add-ins.

Quick Breakfast Ideas

Having a quick on-the-go breakfast allows everyone to get out of the house and ready for fun. This will also put an end to buying unhealthy and expensive fast food.

Granola

4 Cups quick oatmeal

2 Cups of coconut

1 ½ Cups brown sugar or sweetener of your choice

¼- ½ Cup of melted butter or coconut oil

1 Tsp vanilla extract

1/4 -1/2 Cup of honey or maple syrup

 

Combine ingredients, mixing well. Spread out on a cookie sheet and bake at 250-300 degrees. Stir often until the mixture is brown, about 1 hour.  Allow it to cool, then break into pieces and store in an airtight container.  

For added protein, mix in 1 Cup of peanut butter with the above wet ingredients on the stovetop until melted.

Add-ins after baking:

Nuts

Raisins

Dried fruit

Chocolate chips

Carob Chips

And more

Breakfast Casserole

6-8 eggs beaten with 2 cups of milk

1-2 Cups of cheese ( Cheddar, Colby Jack, Swiss, or Pepper Jack)

2 Cups of meat ( fried bacon, fried sausage or ham)

Chopped 1 onion and bell pepper. You can add mushrooms if you desire. Season with salt and pepper.

Combine ingredients, and reserve some cheese to spread on top. Bake at 325 for 45 minutes or until a knife comes out clean. Store in the freezer or refrigerator and heat up when ready.

 

French Toast

1 half of a homemade bread loaf (any kind you want) that is starting to go stale, cut up into bite-sized pieces

4 eggs

2 cups milk ( whole, 2%, or Half &half)

¼-  ½  Cup of brown sugar or sweetener of choice

1 Tsp of vanilla extract

1 Tsp Cinnamon or more if you love cinnamon like me

Additional add-ins of choice: fresh fruit, raisins, or dried fruit

Combine all ingredients except the bread. Grease a baking dish and place the bread cubes in then pour over the mixture.  Cover and refrigerate for at least 1 hour.  Bake at 350 for 1 hour or until a knife comes out clean.

Sprinkle with powdered sugar and serve with maple syrup.

You can use icing instead of powdered sugar.

Icing

4oz cream cheese

2 Cups powdered sugar

1 tsp vanilla extract

¼ Cup or more until the desired consistency of heavy cream

Mix softened cream cheese, vanilla, and powdered sugar. Add heavy cream until the desired consistency. Pour over the casserole. 

This recipe may be frozen or refrigerated until ready to use. Heat and serve with maple syrup.

 

Breakfast Burrito

4 eggs scrambled

4 slices of bacon, fried, or ½ pound of sausage, fried

Pico

Cheese of choice: cheddar, Colby, pepper jack

4 Tortillas heated

Assemble: On a tortilla, place cheese, egg, bacon, and/or sausage, and Pico. Wrap and enjoy.

 

Pico

1 bell pepper, finely chopped

1 onion, finely chopped

2 tomatoes, finely chopped

Jalapeno to taste, finely chopped

Bunch of cilantro, finely chopped

Mix salt and pepper to taste

 TIP**Keep Pico in your refrigerator. It is great to add to salads or season dishes when you don’t have time to chop.

Cinnamon Roll Coffee Latte

1 cup almond milk or oat milk

1 Cup half and half or heavy cream

4 Tbsp honey or maple syrup, or sweetener of choice

2 Tsp Cinnamon

Heat all ingredients until all are combined. Add to strong coffee to have a yummy cup of joe.

Can have it in iced coffee or hot coffee. Enjoy.

EASY YUMMY CINNAMON ROLLS

Nothing says good morning like warm cinnamon rolls.

3 Cups Water 101 degrees

2 Tbsp active dry yeast

3 ½ Cups all-purpose flour

3 Cups Einkorn, Spelt or whole wheat flour or a combination of both

1 ½ Tbsp Sea salt

Add yeast and water stir and let set for 5 minutes.  Add flour and salt to combine all ingredients.

Cover with plastic or a damp towel and leave at room temperature for 2 hours. Place in refrigerator for another 1 ½  hours.

Divide dough in half and roll into 2 rectangles or use half to make dinner rolls.

Filling

1/2 Cup brown sugar or sugar of choice

2 heaping teaspoons of cinnamon or more if you like

1/3 Cup butter melted

Spread filling onto the dough rectangle. Roll the dough tightly and slice into even rolls.

Place on a baking sheet and bake at 350 degrees until brown.

Carmel Frosting

Brown a ½ stick of butter

Add 1/3 Cup of brown sugar or brown sugar of choice

½ tsp.  Vanilla

Add heavy cream until the desired consistency

Frost the cinnamon roll and  Enjoy!

Easy Yummy Sourdough Bread

Although the majority of this bread recipe is all purpose flour Einkorn flour was used to make this bread healthier. Sourdough gives important health benefits for our gut. I hope you enjoy this recipe.

EASY YUMMY SOURDOUGH BREAD

500 g all-purpose flour

200 g Einkorn flour

2 cups warm water

200g active sourdough

1 tsp. dry instant yeast

1 tbsp. salt

Mix flour and water. Let stand for 30 minutes.

Mix sourdough, yeast, sugar, and salt together. Let stand 30 minutes

After 30 minutes mix the sourdough mixture and the flour mixture. Don’t over mix. You can mix by hand or with dough hooks.  Let it sit for 20 minutes.

Stretch the dough on a lightly floured surface. Do a stretch by folding each side inward like an envelope. Then work the dough into a ball.

Place it in a floured banneton basket, cover, and place it in a warm place to rise for at least an hour.

Cover with plastic wrap, beeswax, or a plastic grocery bag and put in the refrigerator overnight.

In the morning, turn out on parchment paper. Score the top and place parchment paper and dough into a cast iron dutch oven. Allow to rise until doubled.

Set a pan of water in the oven. ( this will create steam.) Place a lid on the dutch oven and place it into a cold oven and turn it on at 450 degrees. Set the timer to 40 minutes.

After 40 minutes, remove the lid and continue to bake for another 20 minutes.

Healthy Teas

A cup of hot tea in the fall is cozy but may also help fight colds and the flu.

1.       My healthy tea (keep this in your refrigerator to sip on anytime during the day. I have found this helps to fight colds and flu.)

5 herbal tea bags of your choice added to 3 cups of boiling water. Steep for 5 minutes.

2 tablespoons apple cider vinegar

2 teaspoons cinnamon

2 teaspoons ginger

2 teaspoons turmeric with a sprinkle of black pepper

Juice of one lemon

Honey to taste

Store in a mason jar in the refrigerator for up to 1 week.

 

2.       Spice tea

1 cup of boiling water

2 Oolong tea bags

1 Rooibos Red tea bag

1 teaspoon cinnamon

1 teaspoon ginger

¼ teaspoon nutmeg

Honey to taste

Steep for 5 minutes

 

3.  Hibiscus Spice tea

1 Cup boiling water

2 Hibiscus tea bags

1 tablespoon apple cider vinegar

1 teaspoon cinnamon

Steep 5 minutes

Add honey to taste

 

4.  Bedtime tea

1 cup boiling water

2 Chamomile tea bags

½ teaspoon ginger

½ teaspoon cinnamon

Juice of ½ a lemon

Honey to taste

1 Container Chobani plain or vanilla

3-4 Cups Fairlife milk

1 tsp. vanilla

Honey to taste

Mix together and place in the yogurt jars. Push function then start. 8 hours later you will have yogurt.

BASIC MUFFIN MIX- MAKES 11 CUPS

It all begins with an idea.

8 C FLOUR                                 3 C SUGAR  

 3 TBSP BAKING POWDER      2 TSP SALT

2 TSP CINNAMON                    2 TSP NUTMEG

Combine and divide placing in a freezer bag store in the freezer.

To make muffins:

Mix 3 cups , 3 tablespoons of oil, 2 eggs and whatever you

want to add.

Add Ins;

BERRIES, CHOCOLATE CHIPS, NUTS OR DRIED FRUIT

BAKE FOR 20 MINUTES AT 350 MAKES 12 MUFFINS

 Once you are ready to make some delicious muffins, simply follow these easy steps. Start by preheating your oven to 350°F (175°C). Next, take the prepared muffin mix out of the freezer and let it thaw for a few minutes. In a separate bowl, whisk together 3 cups of the muffin mix, 3 tablespoons of oil, and 2 eggs until well combined.

 Now, it's time to get creative with your add-ins! Whether you prefer berries for a fruity burst, chocolate chips for a sweet treat, nuts for some crunch, or dried fruit for a chewy texture, feel free to mix in your favorites.

 

Once you have added your desired mix-ins, scoop the batter into a lined muffin pan, filling each cup about two-thirds full. Pop the pan into the preheated oven and bake for approximately 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

SALADS

Apple pecan salad

Lettuce blend of iceberg, spinach and arugula  chopped

2 Chopped apples of your choice

 ½  Cup Dried cranberries or how many you like. I tend to like a lot.

½ Cup Honey roasted pecans

Feta or blue cheese either will work

Can add grilled, fried, or blackened chicken to make this an easy entrée

 

5 Cup Salad (my kids loved this when they were little)

1 Cup mini marshmallows

1 Cup drained pineapple

1 Cup coconut

1 Cup sour cream

1 Cup mandarin oranges

Mix together and refrigerate 6 or more hours

 

Cucumber tomato salad

1 large tomato slice thin and each sliced in half

1 yellow onion sliced in thin strips

1 large cucumber sliced thin

Salt and pepper to taste

Drizzled with either olive oil and vinegar or a vinaigrette dressing

 

Broccoli Raisin Salad (This recipe came from my Lazarus cookbook)

1 Cup Mayonnaise

½ Cup sugar

1 tbsp. vinegar

2 bunches of fresh broccoli cut into floret

½ pound bacon fried and chopped

1 small onion diced small

7 ½ 0z box raisins

 

Dressing:

Mayonnaise, sugar and vinegar mixed.

Salad:

Combine the remaining ingredients then pour on the dressing.

Chill before serving.

Easy Anti-inflammatory breakfast

Anti-inflammatory breakfast are easy fun and filling.

Oatmeal

Prepare with milk or nut milk

Add-ins to turn plain oatmeal into yummy oatmeal.

1.       Cranberry Oatmeal

Cranberries, cinnamon and walnuts

2.       Apple pie oatmeal

Chop apples, nuts, cinnamon and nutmeg

3.       Pumpkin pie Spice

Pumpkin spice, cinnamon, raisins and top with nuts

4.       Blueberry cobbler oatmeal

Cinnamon, blueberries, and a drizzle of honey

 

Omelets                             

For one omelet

2 eggs

¼  Cup of milk

Salt and pepper to taste. Mix well.

 

Add-ins to change a plain omelet to a yummy omelet.

1.       Southwestern

Diced bell peppers, onions, mushrooms, and tomatoes.  Add Colby or cheddar cheese or both. Serve with salsa.

 

2.       Spinach

Baby spinach, chopped onions, and parmesan or Swiss or pepper jack cheese (your choice)

 

 Yogurt homemade

1 small container of Chobani vanilla Greek yogurt (Chobani has several strains of bacteria. This is important for probiotics.)

3-4 Cups of Fairlife milk whole, 2% or fat-free

Vanilla to taste

Honey to taste

Mix. Place in the yogurt maker.

I use the Suteck 8 jar yogurt maker. Andabsolutelyy love it!
